Strawberry Syrup

Made from the tops of strawberries, this syrup is a great way to reduce food waste while making a yummy topping for pancakes and ice cream as well as a flavoring for drinks like lemonade
Cook Time 40 minutes

Ingredients
  

  • 4 cups strawberry tops
  • 3 cups water
  • 3 cups sugar

Equipment

  • 1 Large pot
  • 1 Ladle
  • 1 Water bath canner or large pot
  • Mason Jars, Rings, and Lids
  • Jar lifter
  • 1 Strainer

Method
 

  1. Add strawberry tops, water, and sugar to a large pot
  2. Simmer for 30 minutes
  3. Strain with a strainer or cheesecloth. Discard strawberry tops.
  4. Ladle the syrup into warm jars, leaving 1/2 inch headspace
  5. Clean the rims. Add lids and rings
  6. Process in a water bath for 10 minutes. Ensure that water is boiling and reaches at least 2 inches above the lids of the jars
  7. Remove from the canner and allow to cool on a towel on the counter for 24 hours
  8. After 24 hours, check the seal by ensuring that the middle of the lid does not move when gently pressed.
